Caribbean Hash
We made this a few times, including family & friends camping. It never fails to surprise people.

Red Potatoes (small, one per person, large, 1/2 per person) (If you can get the fingerling potatoes or add a white and blue potato it really adds interest.
Sweet Potatoes (small, one per person, anything larger, 1/4 per person)
1 medium Sweet Onion
1/2 cup corn cut from the cob. (Roasted on the grill first is best)
Greek seasoning to taste.

Cut potatoes and onion into 1/4 inch chunks. Add all ingredients to frying pan with 2 tbsp vegetable oil. On high heat saute until turning brown. Turn down heat and cover for 2 minutes. Serve hot.
