Charro Beans
OK, this is so easy it's embarrassing to add to the list, but it is a good recipe.

2 tbsp butter
1 can pinto beans
1 tbsp minced garlic

Place can of pinto beans into saucepan with the butter, heat on high for a minute, then include garlic. Stir and simmer a few minutes more. Make sure beans are tender before serving. Delicious with tortillas and southwest marinated chicken.

Add some Southwest flavored beef (fajita/Carde Asada, etc.) and this can become a meal bowl.
