Haupia (Hawaiian Coconut Milk Pudding)
This pudding is from Hawaii. It is a firm pudding with a very light taste, served with tropical fruit. One gentleman raised in Hawaii declared it was like Mom used to make.
12 Oz Coconut Milk (Chilled)
1 1/2 cups Water
1/2 cup AND 2tbsp Sugar
1/2 cup AND 2tbsp Cornstarch
1/4 tbsp vanilla extract
(To make Persian Rose Pudding, replace with Rose extract)

Combine all ingredients in saucepan. Stir constantly over medium heat until thickened.
Lower heat and cook for ten minutes, stirring constantly to avoid lumping or burning. Pour pudding into an 8x8 inch dish and put in refridgerator to set. Cut into squares for serving. May add tropical fruit as topping.
