2 lbs. Lean Ground Beef (Leaner ground beef, less grease)
1 cup fine chopped Onion
1/2 cup fine chopped Celery
1 tbsp minced Garlic
3 tbsp Parsley
1/2 cup shredded Carrot
1/2 cup chopped Mushrooms
1 cup fine Italian breadcrumbs
1/2 cup Panko crumbs
1/2 cup Milk
3 tbsp Bar B Que sauce
2 eggs
2 tbsp Worcestershire Sauce
1/2 tsp Salt
1/2 tsp Pepper
1 1/2 tsp Italian Seasoning
Mix all ingredients completely.
Take a 9 X 5 Loaf pan.
Line with parchment paper to lift the loaf out (leave some paper on sides to use as a handle)
Pack mixture into loaf pan. Pack it solidly.
Press meat down gently and evenly in pan.
Cover top with bar b que sauce of choice. (We use Sonnys Real Open Pit Bar B Que sauce)
Bake in oven for 50 minutes at 375 degrees F.
When done, let cool for at least 10 minutes, carefully lift meatloaf out by parchment paper sling to cutting board or plate to slice.
We use cooking spray in the loaf pan to keep the parchment paper sling in place while loading meat mixture.
If you remove the carrots from the recipe you can use this for making meatballs instead of meatloaf.
